Wild Rice and Quinoa Salad


Modified recipe. Original recipe by Canadian Living

This salad is great for picnics, potlucks or for packing into lunches. Careful though, it makes a lot! If you're only making it for a few people, consider halving it.

What you'll need
1 cup Quinoa
1 cup Wild rice
3 cups Cherry tomatoes, halved
1/2 Large red onion
1 Red pepper
1 Cucumber
4 cups Spinach, chopped
200g Feta cheese, crumbled

Dressing
1/2 cup Extra-virgin olive oil
1/2 cup Lemon juice
1 tsp Dried oregano
1 tsp Salt
1/2 tsp Pepper

How to
1. Cook the quinoa and rice according to the directions on the package. Rinse with cold water and drain well. Put in a large bowl.

2. Slice the red onion. Cut the red pepper and cucumber into small chunks. Add the tomatoes, onion, pepper and cucumber to the rice and quinoa mixture.

3. To make the dressing, whisk all the ingredients together. Pour over salad and toss to coat.

4. Before serving, stir in the spinach and feta cheese.
