Triple Berry Sour Cream Muffins


A friend from work gave me this recipe ages ago and it is my all time favourite muffin recipe!

What you'll need
1 cup Sugar
1/2 cup Butter, softened
1 cup Sour cream
2 Eggs
1 tsp Vanilla
2 cups All-purpose flour
1 tsp Baking powder
1 tsp Baking soda
1 1/2 cups Frozen mixed berries (I use a mix of blueberries, raspberries and blackberries)

How to
1.  Preheat oven to 375°F. Grease a 12 cup muffin tin and set aside.

2.  Cream together butter and sugar.  Add eggs, sour cream and vanilla and mix till combined.

3.  In a separate bowl mix together the flour, baking powder and baking soda.  Add to butter mixture and combine just until flour mixture is moistened.

4.  Fold in frozen berries. Be sure not to over mix or the batter will turn purple!

5.  Divide batter among the 12 muffin cups and bake for 20 minutes until muffin tops are just golden.
