Healthy(ish) Muffins Part 2: Banana Wheat Germ

Recipe slightly modified from original by Rogers Wheat Germ.

These muffins are tasty and moist, and certainly a healthier option than my favourite banana bread recipe. 

What you'll need
1 1/2 cups all-purpose flour
1 cup wheat germ
1/2 cup brown sugar
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
2 bananas, mashed
1/2 cup milk
2 tsp lemon juice
1/4 cup vegetable oil
2 eggs
12 pecan halves (optional)

How to
1.  Preheat oven to 375°F. Line a muffin tin with 12 paper liners.

2.  Combine the flour, wheat germ, sugar, baking powder, baking soda and salt; stir well. 

3.  In another bowl, whisk together the bananas, milk, lemon juice, oil and eggs. Add the banana mixture to the dry ingredients and stir just until blended. 

4.  Spoon mixture evenly between the 12 muffin cups and top with a pecan half. Bake for 20-25 minutes. Let cool on wire rack.
