This is a summer favourite of mine. The avocado mango salsa is fresh and flavourful and complements the mustard pork perfectly. It's a quick and easy meal, so make it any night of the week!
What you'll need
4 tsp Dijon mustard
1 tbsp Balsamic vinegar
2 Garlic cloves, minced
1/4 tsp Salt
1/4 tsp Pepper
1 lb Pork loin centre chops, boneless
Salsa:
1 Mango, peeled and diced
1 Avocado, peeled and chopped
1 Green onion, finely chopped
1 tbsp Lemon juice
pinch Salt
dash Hot pepper sauce
How to
1. In a small bowl, mix together mustard, vinegar, garlic, salt and pepper. Brush over pork (both sides).
2. Place pork on greased grill, grill pan or indoor grill over medium-high heat; close lid and grill, turning once, until just a hint of pink remains inside, about 8 minutes.
3. Meanwhile, in bowl, combine mango, avocado, green onion, lemon juice, salt and hot pepper sauce. Serve with pork. Makes 4 servings.
