Pears and ginger...the perfect pairing.
What you'll need
2 1/2 cups Flour
1 tsp Baking soda
1 tsp Ground ginger
1/2 tsp Cinnamon
1/2 tsp Salt
3/4 cup Brown sugar (packed)
1/3 cup Vegetable oil
1 Egg
1 cup Buttermilk
2 cups chopped, peeled pears
Topping:
1/3 cup Brown sugar (packed)
2 tsp Butter, melted
1/4 tsp Ground ginger
How to
1. In a bowl, whisk together flour, baking soda, ginger, salt and cinnamon.
2. In a separate bowl, whisk brown sugar with oil; whisk in egg and buttermilk. Pour over dry ingredients; sprinkle with pears and stir just until dry ingredients are moistened.
3. Spoon batter in to 12 paper lined muffin cups.
4. Topping: In bowl, combine sugar, butter and ginger; sprinkle over batter.
5. Bake in centre of 350°F oven until tops are firm to the touch, about 25 minutes.
