Roasted Sweet Potato Salad

Recipe by Anna Magazine.

This is a fun way to brighten up your sweet potato dish.  

What you'll need
2 medium Sweet potatoes (about 4 cups), peeled and cubed
1 tbsp Honey
Salt and freshly ground pepper, to season
1/4 + 2 tbsp Extra-virgin olive oil
2 tbsp Fresh lime juice
1 tbsp Mayonnaise
1/3 cup Green onions, chopped
1/4 cup Fresh mint leaves, chopped

How to
1.  Preheat oven to 400°F.  Toss potatoes with 2 tbsp olive oil and honey in a medium bowl.  Place on parchment lined baking sheet.  Season with salt and pepper and roast for 30-40 minutes or until soft.

2.  In medium bowl, combine lemon juice, mayonnaise and the remainder of the olive oil; add potatoes and green onions.  Toss well and sprinkle with mint.  Serves 4 to 6.
