Baked Mac and Cheese for Two


I don't think I can think of a more comforting dish than this. Not only is it comforting, it's delicious. I made it monday night and was craving it again for the rest of the week.

What you'll need
1 cup Macaroni, uncooked
3 tbsp Butter
3 tbsp Flour
1 cup Milk
Salt and pepper to taste
2 strips Bacon, cooked and finely chopped
2 cups shredded Cheddar cheese

How to
1.  Preheat oven to 350°F. Cook the macaroni according to package instructions.

2.  Melt the butter in a small saucepan over low heat. Stir in flour with a wire whisk.  Cook over low heat, stirring constantly until mixture is thick and smooth.  Slowly add the milk a little at a time while continuing to whisk constantly.  Still stirring, cook for about 5 minutes until mixture is thickened.  Season with salt and pepper to taste.

3.  Line a 20 cm x 20 cm (8" x 8") glass baking dish with parchment paper. Add the cooked macaroni to the prepared dish.  Pour the white sauce over top and sprinkle with bacon bits.  Toss to coat.

4.  Add half the cheese and gently toss with the macaroni.  Top with the remainder of the cheese, spreading evenly over the macaroni.

5. Bake for 20 minutes until bubbly. Serve.
