Jamie's Fajita's

Slightly modified recipe from Jamie Oliver's Food Revolution.

I grew up on the packaged fajita mixes, so when I found this easy recipe for your own fajita seasoning and salsa, I was very excited.  Not to mention, I love all things Jamie Oliver. You'll love these fajitas. They taste so fresh, you'll never go back to the package!

What you'll need
1 Red bell pepper
1 Medium red onion
2 Skinless, boneless chicken breast fillets
1 tsp Smoked paprika
Pinch Ground cumin
1 Lime
Olive oil
Sea salt and freshly ground black pepper
4 flour tortillas
1/2 cup Sour cream
1 cup Guacamole
4 oz. Cheddar cheese

Salsa:
1/2-1 Fresh red chile, to your taste
15 Ripe grape or cherry tomatoes
1 tbsp Red onion, finely chopped
A small bunch of fresh cilantro
Sea salt and freshly ground black pepper
1 Lime
Extra-virgin olive oil

How to
1.  Put your grill pan on high heat.  Halve and seed your bell pepper and cut it into thin strips.  Peel, halve and finely slice your onion.  Slice your chicken lengthways into long strips roughly the same size as your bell pepper strips.

2.  Put the peppers, onion and chicken into a bowl with the paprika and cumin.  Squeeze over the juice of half a lime, drizzle over a lug of olive oil and season with a good pinch of salt and pepper.  Mix well.  Let marinate while you make your salsa.

3.  Finely chop your chile.  Roughly chop your tomatoes and cilantro, stalks and leaves.  Put the chile, tomatoes and red onion into a second bowl with a pinch of salt and pepper and the juice of 1 lime.  Add a good lug of extra virgin olive oil, then stir in chopped cilantro.

4.  Put your pepper, onion, chicken mixture onto your pan and cook until chicken is cooked through (6 to 8 minutes).  Be sure to keep turning your mixture so it doesn't burn.  Warm your tortillas in the microwave.

5.  Place the chicken mixture in a bowl.  Serve with the tortillas, salsa, guacamole, sour cream, cheese and remaining lime wedges.  Let your guests do the dishing and wrapping.
